The fishing plant OP7 & BELL S.A.C. processes anchovy, bonito, mackerel, and jurel through five stages to obtain high-quality fishmeal and fish oil with a high protein content: receiving, cooking and pressing, milling (wet and dry), drying, cooling, antioxidant addition, and bagging. This research focuses on Process II (Wet Zone), where operational failures were identified due to the manual control of the solids level in the press discharge duct, causing blockages, inefficient mixing of liquids and solids, overflows, process interruptions, and safety risks for personnel. To address these deficiencies, an industrial automation architecture was implemented based on the Vegabar 83 differential pressure transmitter to measure the solids level through two PI (Proportional–Integral) controllers, which regulate the operation of the cooker and the press. The press controller operates according to the motor amperage, automatically adjusting the variable-speed drive between 2.9 and 5.1 RPM depending on the load, ensuring uniform discharge and preventing overloads. In addition, the transmitter is calibrated considering the average densities of the processed species. The system stabilizes the solids level, reduces obstructions, decreases unplanned downtime by 10 %, and improves process efficiency, achieving yields of 62 % and 64 % in oil and fishmeal, respectively. The implemented industrial automation architecture optimizes the cooker and press, improving operational continuity and enhancing the quality of the final product in Process II.
